Gluten Free Pancakes

I’ve only just realised it’s Pancake Day (Shrove Tuesday)!

We eat pancakes all the time here at Kimberly Towers and we usually buy a gluten free packet mix for Coeliac Daughter that produces fluffy buttermilk pancakes. I’ve just checked and of course, we’ve run out.

So later, I shall be attempting this recipe that I found on the BBC Good Food website.


  • 125g Doves Farm Gluten Free Plain Flour
  • 1 egg
  • 250ml milk
  • Butter (for frying)


As always appears to be the case with gluten free recipes it’s the method that’s the important bit. I have tried just throwing it all in together and blitzing it before and it just doesn’t work. So I shall be following these prep guidelines to the letter.

  1. Put the flour in a bowl and make a well in the centre. Crack the egg in the middle and pour in a quarter of the milk. Use an electric whisk to thoroughly combine the mixture. Once you have a paste, mix in another quarter and once lump free, mix in the remaining milk. Leave to rest for 20 minutes. Stir again before using.
  2. Heat a small non-stick frying pan with a knob of butter. When the butter starts to foam, pour a small amount of the mixture into the pan and swirl around to coat the base – you want a thin layer. Cook for a few mins until golden brown on the bottom, then turn over and cook until golden on the the other side. Repeat until you have used all the mixture, stirring the mixture between pancakes and adding more butter for frying as necessary.
  3. Serve with the pancake topping of your choice!

Reading through the comments on the website it would seem that it’s recommended to stir the mixture between making each pancake. I will definitely do this as I know how readily my gluten free mixtures have separated in the past.

Yes, yes I realise I should probably be posting tried and tested recipes but like I said I totally forgot it was Pancake Day so it’s all fly-by-the-seat-of-your-pants stuff. Bit like this blog really. Wish me luck!

Update: Just to let you know that the pancakes worked out perfectly! Featured photo is of our pancakes. I will definitely use this recipe again. I did follow the prep guidelines to the letter. And I did whisk the mixture with a fork in between each pancake. Enjoy!
